my apologies first..I have just started to investigate my trip from beijing to moscow via the transmongolian/ transiberian rail... I know there are limited times/days/trains throughout but am curious if inspired by a stop, can I stay longer than the stop and get on a later train? Am I able to purchase tickets at smaller stations for a short trip or does it have to be a longer stretch like straight from Irkutsk to Moscow?

there's no such thing as an "open ticket". you can, though, get off the train and if you have a ticket for a stop further down the line, pay a small reservation fee and get a new ticket if there are tickets available. you may find it problematic to do this if you don't speak/read russian, or if you are traveling in the summer when tickets can be in high demand.

you can absolutely buy a bunch of point to point tickets up front but this would require that you know where you want to stop and how much time you'll spend in each location.

if you have plenty of time to spare, you probably could make it all the way across russia by buying tickets to your next desination as long as you were flexible about the train number and didn't mind waiting a day or two.

the fast long distance trains, though (2, 3, 4, etc.) fill up quickly and it would be lots harder to get tickets on the fly during the summer.

this is a great thread over on thorntree that will help you understand russian train travel: http://www.lonelyplanet.com/thorntree/thread.jspa?threadID=1187743. also visit www.seat61.com.
