yes. i like them too.. my girlfriend makes really nice ones. the dough doesn't seem too spectacular though when looking at the recipe again: it seems not much different from the way pancakes are made in holland. i never get them as thin myself though..
maybe someone has a suggestion. or is it just a matter of practice, practice..? |

| There is no comparison to russki blini and dutch pancakes. While both are delicicous, blini are very thin, but that is the secret. |

Okay, I'm not a cook, and can't give you the exact recipe difference, but basically, the main distinction is that Russian "pancakes" or, as they're known in Russian, "blini", are like crepes. They're substantially thinner.
Otherwise, Russians usually stuff their "blini" with a kind of filling. It can be sweet, like jam, sweetened condensed milk, or chocolate. Or, it can be non-sweet, and stuffed with meat, cheese, rice, etc.
I think that if you look up a recipe for French "crepes" you'll have the basci idea of Russian "blini". |

Couple of authentic recipes on this old article: http://www.passportmagazine.ru/article/196/
Pancake/Butter week is way over, but I'm gonna have some bilini with blueberries right after this! |
