I am interested in visiting both Moscow and Ukraine this coming winter. I've looked at flights and they are about $150 less to fly to Kyiv than to fly to Moscow as destination. But the flights to Kyiv all stop in Moscow and change planes.

Will I be able to get a Russian visa if I just skip getting on the connecting flight, stay in Moscow for a few days and then fly/take train out?

The flight is:
Seoul-Moscow-Kyiv
Kyiv-Moscow-Seoul

and I would just do
Seoul-Moscow- (separate train/flight to Kyiv)
Kyiv-Moscow-Seoul

Any advice, many thanks!

I'm a little confused by the question -- you asked, "will I be able to get a Russian visa if I ..."

For the plan you are considering, you would NEED a visa, specifically a tourist visa. Usually, these visas are not very difficult to get, and you can learn more about this from the waytorussia site.

Be aware that in most cases, a person must be in the country that issued their passport, in order to apply for a Russian visa. Is the Republic of Korea your home country? If not, how long will you be in Korea before you start your trip to Russia/Ukraine?

Also, depending on your home country, you may need a visa to enter Ukraine.

One more thing to consider: I think that it is usually OK to skip a second flight segment, but I'm not sure you can count on this. If you don't make the second flight, I suppose that it's possible the airline could cancel the rest of your ticket.

Getting the visa in general I understand, my concern was since I technically wasn't supposed to stop in Moscow, would that make it difficult.

I did think about the airline canceling the second half of the ticket. That would be pretty unfortunate.

I'm okay with Ukraine. USA, so can go with no visa.

I have read some reports of Russian consulates asking for air tickets or other evidence of travel arrangements.

However, this is not the case for US citizens applying in the United States -- so if you will get your visa before going to Korea, that lack of a "ticket to Russia" is no obstacle.
